Saucy

For lunch today, the kids and I sat around the table with a big bowl of strawberries and a little bowl of Dark Chocolate Hot Fudge. I make no apologies.

Dark Chocolate Hot Fudge

1/4 cup unsweetened cocoa powder
1/3 cup packed dark brown sugar
1/2 cup light corn syrup
2/3 cup heavy cream
1/4 teaspoon salt
6 ounces bittersweet chocolate (chopped)
2 tablespoons butter
1 teaspoon vanilla

Stir together cocoa powder, brown sugar, corn syrup, cream, salt, and half of the chopped chocolate in a saucepan. Cook over moderate heat, stirring, until chocolate is melted. Cook mixture at a low boil for 5 minutes.

Remove pan from heat, add remaining chocolate, butter and vanilla, and stir until smooth.

Store in an airtight container in the fridge. (I am using a mason jar)

oh girl, if you like the dark choc fudge, you really oughtta try some of the raw chocolate recipes! SO rich and yummy and actually good for you! try googling it! you have to buy the raw cacao online though...they don't even carry it at whole foods!
