Sweet Potato Paratha

A Paratha is a flatbread similar to indian naan bread. It is quick and easy to make.

Sweet Potato Paratha

1 sweet potato (cooked. Mine was leftover from dinner a few nights before)
1 1/2 cup whole wheat flour
1/2 tsp cumin
1/4 tsp curry powder
salt

spices to taste: coriander, cinnamon, chili powder, or cayenne would all work in this dish

Mix the flour with the spices. Blend in the potato to make a soft dough.

Roll dough into balls and flatten each into a circle. Cook on a heated skillet with or without oil. (I used a little butter)

I served my paratha with a salad. I used my paratha as a little wrap. It made for a very happy lunch package :)
